Cashew Eggnog

I have been LOVING the recipes in Kristin Cavallari’s second cookbook True Comfort.

Last week we decorated our Christmas tree + listened to Christmas music + made her homemade eggnog. Basically my favorite night ever!!

This cookbook has more than 100 cozy recipes free of gluten and refined sugar. Literally every single recipe in this sounds amazing & I fully plan on trying them all. I just messed up the Pumpkin Banana muffins but will be attempting again soon.

It sounds like a lot but it was actually a really easy & enjoyable process!

I made a couple substitutions based on ingredients I had at home. I used almond milk instead of cashew, did not have coconut cream or nutmeg so I didn’t use either.

It still turned out delicious & I can only imagine how much better it will taste next time I try with the exact ingredients. Grocery shopping during this pandemic is not my favorite thing so if I don’t have to run to the store for something, I’m not going. Ya feel??

We also did add 1 shot of whiskey to our eggnog while we did the Christmas tree. DELICIOUS.
